Stewed rhubarb speculoos chia pudding vanilla parfaits (vegan)

   It's the high season of rhubarb and I decided to honor it in different recipes this year because this is my favorite fruit, hum no vegetable, not either... edible plant!


   I was looking for a light and low carb dessert and I went for one in a jar because, well, if you've been following this blog for quite some time, you know I love them (ideas here). Some speculoos cookies also came in the game because it's a good match with rhubarb.

Raspberry pear cardamom chia and millet pudding

   Here is a recipe I had not scheduled on the blog but I made it last weekend and it was so easy, delicious and filling enough to wait until lunch that I thought you may like too. I also thought about all the people who say they don't have time to eat in the morning because you prepare everything at night and you just have to assemble it in the morning and enjoy! You'll excuse the minimalist pictures but as I said the recipe wasn't planned and I was quite hungry and eager to eat this delicious thing so I made it quick!


   This is not the first time I made an overnight pudding but the first I used millet instead of oats - I love millet since I tried it a few weeks ago! I bet you've heard about chia pudding, well, an overnight oats or overnight "other cereal" is just the same with oats or any other cereal flakes and, even if I like chia puddings (like my favorite one here), I just love overnights! 


   And if you've tried and were not satisfied, I bet you will find your favorite version, I suggest you to try different milks, add some yogurt or not, change flakes, add or remove some of the chia seeds, etc.Then you can top your pudding with whatever you want, fruit, seed butter, chocolat, seeds and more!

Raspberry chia fresca { A protein-packed refreshing drink }

    Less active on the blog for the past weeks - not that I don't have any recipes in stock, they're just waiting to be written or to be tested - but I haven't had much time lately and also I was quite busy on a cooking project I wanted to finish before leaving abroad in vacation.


   Before leaving indeed, a heat wave hit Paris and its surroundings where I live and I needed something fresh to drink but wanted to try something new and I stumbled upon a chia fresca recipe on Pinterest. So it was the occasion to try a new use of these magic seeds. This refreshing drink is a must- liked by sporty people because of its high amount of proteins and fibres that help the body to recover after some efforts.

Raw raspberry & chia seed jam

    Last summer, I had seen a few pictures of raw jams with summer fruit, it seemed nice but I didn't pay more attention. And the publishing day of the Foodista Challenge approaching I thought again about these raw jams and thought it was the occasion to try as the red fruit season has just begun in France!
