Today, just the once will not hurt, this is a trendy recipe I'm going to talk to you about. You may have seen those zoodles on the Web the past months. They are "noodles" of zucchinis/courgettes that are barely cooked and that you enjoy with a sauce or other vegetables like wheat pasta.
I served the zoodles with an avocado pesto, other trendy recipe. You just have to blend avocado, basil (Parmesan cheese and pine kernels if you want) and a slight quantity of olive oil. The advantage of this pesto is that it brings you good fat and nutrients, better than the traditional pesto genovese and as good!

just added a handful of raw cherry tomatoes to add a fresh and sour touch to the dish. If you want to prepare a healthy, light and gluten free dish, for dinner for exemple, these zoodles are a good choice. You just need to own a "spiralizer". If you're not equipped, you can of course use plan B : slice the zucchinis/courgettes in the length with a vegetable peeler to make "tagliatelle" and then cut them again with a sharp knife to make spaghetti.

Zoodles (zucchini noodles), avocado pesto and cherry tomatoes
Prep time : 10 minutes
Cook time : 5 minutes
Serving : 2 plates
- 1 ripe avocado
- 1 basil leaves bouquet
- 1 garlic clove
- 1 tbsp lemon juice
- 1 tbsp olive oil
- salt and pepper
- pine kernels (optional)
- 2 large zucchinis/courgettes
- 1 tbsp olive oil
- a handful cherry tomatoes
- salt and pepper
- Blend the avocado flesh with the basil leaves, garlic, lemon juice, olive oil, some salt and pepper and the pine kernels (optional) until it turns into a creamy and homogeneous texture - add some water if needed (1 tbsp at a time) - then keep aside.
- Wash and brush the zucchinis/courgettes, cut off the ends and create the spaghetti with the spiralizer (or using the plan B explained above).
- Warm the olive oil in a frying pan and slightly cook the zoodles on medium heat for about 5 minutes, be careful to not cook them too much or it could endamage the spaghetti. Add salt and pepper at the end.
- Serve with raw cherry tomatoes and the avocado pesto aside or mixed with the zoodles as you prefer and enjoy right away because it cools down quickly.
