We had up to 42°c (108°f) and it wasn't pleasant at all, it was even scary... So to try to stay hydrated even when it's hot, I swap my usual afternoon and evening teas and infusion for som cold brew ones. I used to prepare it with hot water and then would let it cool down but this is not how you're supposed to do it and this is this way that makes it bitter.</div>

<b><span style="font-size: x-large;"> A</span></b>fter the Christmas yule log cakes and other treats, in France, we have a busy food calendar. In January, we enjoy French kings cakes (called "galettes des rois") for the Epiphany, which is a sort of large flaky puff pastry filled with frangipane (home made almond cream mixed with custard). You hide a lucky charm inside and the one who finds it when eating the galette des rois is said to be the king and can wear a paper crown and chose his queen (reverse way of course if it's a woman). Some traditions also say that the one who finds the lucky charm has to buy the galette des rois the following year.<br>

<b><span style="font-size: large;"> A</span></b>nyway, after this very light pastry in January, we enjoy crepes in February for Candlemas (the "Chandeleur"), crepes are very typical in France and especially in Brittany but I have to say, I make crepes all year long, as soon as I'm craving some for snack, breakfast or dessert. And so here we are and as last year, with these <a href="http://cookalifebymaevaen.blogspot.com/2018/01/rooibos-vegan-French-crepes-and-orange-coconut-syrup.html" target="_blank">rooibos vegan crepes topped with a home made orange coconut syrup</a>, I wanted to publish a recipe a little different. And I had been willing to try cocoa crepes for a long time and the first test was a success and they were not sickly as I would have thought using so much cocoa powder. They're even very good on their own, but I wanted to add a little something to make it a real dessert and served them with some pear and a home made almond chai spices topping. I really suggest you to enjoy them warm because, thanks to the cocoa, the crepes are so moist!<br>

And the last good thing about soups is that you just cook it, eventually blend it and just pour it in a bowl and enjoy!</div>

By the way, did you know that split peas are... green peas that are dried (and else)? Cooked here with some Winter veggies, herbs and spices. Then I mixed a part of the soup to make it smooth. Do not hesitate to add some cooked rice leftovers and/or smoked tofu dices for a balanced healthy dish, my favorite are the almond sesame and Black Forest ones from the Taifun band.</div>

Each year, for Christmas holidays, I like to propose a yummy seasonal dessert. I made traditional yule log cakes for a time and then I kind of fell in love with desserts in a jar and so for Christmas cakes. I'm taking part to a new edition of a French food challenge and the theme of this month was <i>"Let's hang out in the woods"</i> and we had to propose a recipe with fruit or vegetables or nuts from the woods so I chose the mushrooms because, well, I just love them, raw or cooked and all the varieties I guess.</div>

But it seems that it's been very hot too in North America. And I guess, a lot of you are like me, when it's hot like that, I'm not hungry, all I want to to eat fresh drinks, water, fruits or salads and I alternate with mixed salad - with quinoa, raw veggies and my favorite smoked tofu, almond sesame from Taifun and cold soups. I first wanted to make it infuse into soy milk but I finally tried something else, adding rooibos out of a bag directly into the batter, it's subtil but it works and it's good. <b><span style="font-size: large;"> I</span></b> improvised this soup a few weeks ago, it was already around 4PM and I had not had lunch yet so I made this soup in no time with what I got in the kitchen and added some toasts, it was the ideal slunch! I made it again for the blog writing and adjusting the ingredients and quantities this time. You may want to add the coconut milk into the saucepan or serve the soup with a coconut whipped cream for a more cocooning visual aspect.</div>

I love them and the season is so short, you have to enjoy them as much as possible. Last year, I had frozen some but as it is rare that I use frozen fruit now so I didn't even use them because, let's be honest, the texture is different and sometimes not appropriate for some recipes. Don't we appreciate fruit and veggies when they're in season after having waited for them impatiently, after all?</div>

It's a Christmas specialty that most families enjoy during the celebrations of the end of the year. The rice is cooked slowly in milk<span style="font-family: "courier new" , "courier" , monospace;"> (I chose plant-based)</span> then served and each one can add sugar and cinnamon according to one's tastes. </span></div>

I had wanted to make some again since but with buns more sweet and moist like brioche and less bread because they're my favorite. So I made a new burger recipe that I'll publish by the end of the week.</div>

<b><span style="font-size: large;"> I</span></b> don't often take time to make bakery, however I love it, I like to knead the dough for bread, brioche and else and watch it rise slowly like magic. I don't have a food processor so I do everything by hand but I like this step I find relaxing like those little foam balls you knead inside of your palm to destress yourself. And after all, this is not so long, you just have to think about the rise time ahead.</div>
